asparagus risotto
My grandmother used to say: “in May mushrooms you should try”. Porcini Mushrooms still have prices that cannot be applied by a restaurant, so they are eaten by seekers only. But spring is in its full splendor and offers us flavored vegetables: zucchini, zucchini flowers, lots of asparagus, peas, broad beans, the last artichokes before the heat makes them too hard, and many juicy salads.
The asparagus in particular, due to its diuretic properties, is a real natural cure: Ciro Vestita could say that it has TRULY EXCEPTIONAL properties! Among the best ways to eat them, you should not boil but cook them directly in the pan with water, oil and fresh garlic, until the water dries, and let them pull all their juices out for about 15 – 20 minutes (depending on the size). Keep the extremities of the smaller ones, split them in two and hold them ten minutes in cold water: here excellent additions to salad!
