Here at Il Pennello we only use whole sirloin steaks, all coming from the same Italian company and strictly females! These are chosen weekly by Gino himself, who guarantees constant quality. From these sirloins our chef Giorgio cuts at the time of serving the steak requested by the customer, with an high accuracy: whether is required one kilo of steak its weight may range between 950 and 1,050 grams, but most likely will be exact!
The steak is then cooked rare on our grid, turned only once and salted only in the cooked parts.
